Pumpkins, pumpkins, everywhere... These orange vegetables are the perfect symbol (and flavor) of the fall season. Now you can bring even more of them to the table by making this delectable dessert, which is everything that is - you guessed it, pumpkin!
Peekaboo pumpkin pound cake (with brown-butter icing) - She Knows
Ingredients for the cake:
1 (14 oz) box of pumpkin bread mix
1 (16 oz) box of pound cake mix
Orange food coloring
Ingredients for the icing:
1 stick of butter (8 tablespoons)
3-1/2 cups powdered sugar
3 tablespoons of evaporated milk
1 teaspoon vanilla
1/2 cup chopped pecans (optional)
Begin by preparing the pumpkin bread
Use the directions on the box to mix up the pumpkin bread batter. Add some drops of food coloring to give it a nice orange-pumpkin tone.
Prepare your pound cake mixture according to the box. Pour it over the pumpkins in the pan. Make sure that the tops of them are covered - yet, be careful not to overfill the pan. Bake in the oven at the temperature and time on the box. Once it's done, let the cake cool.
Pour the butter (and flecks) into your bowl with the powdered sugar. Now add in the portioned vanilla and evaporated milk. Stir the mixture until it is smooth and creamy. If ever it seems too thin, add a small amount more of powdered sugar. Or, if it's too thick, use evaporated milk.
